- open sharepoint central admin site
- go to operation tab
- lick "outgoing e-mail settings" link under topology and services topic.
- fill text box for smtp server.
- fill from address it will appear in task notification emails.

Amila, In this case you must have to Exhange Server Connect with your SharePoint Server. Tip : Use IIS SMTP vitual server to route your email through the 3rd party host. www.moss2007.info
ok, but when the SMTP server require the authentication of sender? How do it in sharepoint ?
